day 2446 – cauliflower quiche

the start of week three quarantine and it’s starting to feel like the new norm. as much as i wanted to be outside enjoying the sunshine, i stayed home most of the day. i’ve also become quite addicted to star chef, a game where i manage my cooking staff. for dinner, my brother in law decided to try a new quiche recipe. it was very tasty but i’m still not thrilled it sacrificed my whole cauliflower. maybe next time i need to buy two

day 2176 – uneaten lunches

uneaten lunches piling up because this week has been a little busy. my monday lunch is still uneaten in the office fridge because of onboarding lunch, first aid lunch meetings. both lunch boxes had things i wanted to eat so i shared the lunches with coworker and skipped the overlaps. if i start getting a stomachache in the afternoon, i’ll definitely blame the old leftover lunch

day 2161 – smoked salmon pinwheel

the best thing about coming home late is still having homemade food by my mom. these smoked salmon tortilla wrapped pinwheels taste is unmatched because it’s made with so much care. no matter what time of the day, my mom will gladly prepare food for me and make sure i don’t starve. i played up a big appetite after returning home from my sports activities and ate all of that

day 2055 – stackable boxes

finishing my stackable plyometric project on a sunny sunday afternoon. it’s great to have a dad that is capable of doing so much handyman work because he did most of the work while i just assisted in the ways that i can. now all that is left is to sand the edges and perhaps attach a thin taekwondo mat on the top to make it safer for shins. if i wanted to go one step further, i could also paint it

day 1874 – poke master

improvised poke bowl for family dinner limited to the ingredients readily available in the fridge. the main ingredients were salmon sashimi, beets corn, cilantro and some wasabi for the zing. it was really light, refreshing yet flavourful. i think my newfound favourite vegetable to be beets. i’ll try making more funky poke bowls next time and experiment with different ingredients

day 1850 – homemade poke

a balanced meal is healthy homemade poke and fatty cream puffs and pillow cakes. poke bowls are way overpriced, so we decided against that and made our own with salmon sashimi, mango, avocado, cucumber, tomatoes, corn and edamame. my nutrition before hockey wasn’t very good today, but i usually stay on top of it and make good decisions. needed this outing with the girls after a long work week

img_20200203_1530241554722323723190887.jpgin my packed lunch today is one of my favorites korean bean sprouts that my mom knows i love. eating late lunches means people get dibs on everything, everyday. cutlery especially forks miraculously go missing at the office, but i got to eat my lunch somehow. if all spoons go missing i’ll soon be eating with whatever utensil is left which could be knives or tongs
